Here’s another dish from the House of Livingstones. Let’s call it Whole Fried Sardine and Peppered Spinach. Here’s how to make yours, thank me later. Leggo!
Sardine (or your choice of fish)
Pepper (scotch bonnet and chili)
To Prepare Vegetable
Grate your pepper.
Dice your onions
Sauté onions in hot oil
Add salt, magi, locust beans (and as you like it)
Braise for five minutes.
While at it, shred your vegetable leaves
Do not parboil or poach your vegetable leaves
Simply stir into the pepper
Simmer for a minute or two or till soft.
To Prepare Fish
Marinate in salt, magi, curry and thyme and other preferred spices.
Fry whole in hot vegetable oil.
Your dish is ready and should probably resemble that in the picture
N.B. Pick your fish and vegetable according to your preference.
